The head nuts are always fun to try and remove. One of the methods we tried, which helped to prevent the studs from turning out with the nuts, was to take a pair of vise grips and clamp them tightly onto the head stud near the base of the cylinder (below the fins, so you can the most engagement). Ideally, have a helper hold the vise grips while you attempt to turn the nut off the head. Although you can't get a super strong grip on base of the stud, something is better than nothing, and it can be just enough to keep the stud from turning on you.
